GRANNY’S CHOCOLATE LOAF

My granny was a simple baker and loved to bake different loaf cakes. She had no fancy equipment but her baking was so tasty. I still use her recipes and they are the best. This is a perfect tea cake and so effortless to make. Very moist and delicious.
- 1 cup of cake flour
- ½ cup of cocoa powder
- 2 teaspoons baking powder
- pinch of salt
- ¾ cup of brown or white sugar
- 2 large eggs or 3 small eggs
- ½ cup of oil
- ½ cup of full cream milk
- 1 teaspoon vanilla essence
- ½ teaspoon coffee mixed with ¼ cup boiled water
- ½ cup of chocolate chips , keep a few aside for the top
- Preheat oven to 180°C. Sift flour, baking powder, salt and cocoa powder together and mix in the sugar.
- Add all other ingredients.
- Grease a loaf pan, add cake mixture and few chocolate chips on top.
- Bake at 180°C for 30 minutes.
