GRANNY’S CHOCOLATE LOAF

My granny was a simple baker and loved to bake different loaf cakes. She had no fancy equipment but her baking was so tasty. I still use her recipes and they are the best. This is a perfect tea cake and so effortless to make. Very moist and delicious.

  • 1 cup of cake flour
  • ½  cup of cocoa powder
  • 2 teaspoons baking powder
  • pinch of salt
  • ¾ cup of brown or white sugar
  • 2 large eggs or 3 small eggs
  • ½ cup of oil
  • ½ cup of full cream milk
  • 1 teaspoon vanilla essence
  • ½ teaspoon coffee mixed with ¼ cup boiled water
  • ½ cup of chocolate chips , keep a few aside for the top
  • Preheat oven to 180°C. Sift flour, baking powder, salt and cocoa powder together and mix in the sugar.
  • Add all other ingredients.
  • Grease a loaf pan, add cake mixture and few chocolate chips on top.
  • Bake at 180°C  for 30 minutes.
