GARLIC PORK STIRFRY WITH MUSHROOMS (LOW CARB)
- 400 g pork stir-fry
- 3 tablespoons paprika
- mushrooms, cut up
- 2 handful spinach (fresh / frozen)
- plain yoghurt (Greek), 1 small tub
- 3 garlic cloves, finely chopped
- 5 teaspoons butter
Coat the pork in paprika.
On med-high heat, cook the pork in butter, turning up heat at the end to sear all of the pork.
Remove the pork from the pan and reduce heat to low-med.
Add in mushrooms, garlic, and additional butter if needed.
Add your spinach and fry.
Add your yoghurt once the mushrooms are finished cooking.
Add pork back to the pan and allow 5 minutes to simmer.
