FRESHLY BAKED BANANA MUFFINS 

  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg, at room temperature
  • 3 bananas, medium ripe
  • ⅓ cup oil
  • 1 teaspoon vanilla essence

In a large bowl, combine all dry ingredients; mash the bananas in a separate bowl. Add egg and oil and vanilla and mix well. Stir into dry ingredients just until moistened, don’t overmix.
Spoon into a prepared muffin pan.
Bake at 180 °C for about 10 – 15 minutes.
