FILLING FOR MINI MILK TARTS

- 1 litre longlife milk
- 1 cup of sugar
- 80 ml cornstarch
- 80 ml cake flour
- pinch of salt
- 4 extra large eggs
- 5 ml vanilla essence
- Mix all dry ingredients and whisk together.
- Mix vanilla and eggs together and add to the dry ingredients.
- Whisk together.
- Bring milk to boil and add some hot milk to egg and flour mixture while whisking all the time.
- Remember to put stove lower while hot milk gets added to egg and flour mixture.
- Add the of flour mixture to the boiling milk on the stove and whisk until mixture thickens.
- Pour the cooked mixture into a bowl and cover with cling wrap.
- Make sure the cling wrap touches the milk tart surface.
- Wait until cooled down and then refrigerate.
- When ready to to use as filling, mix well and pipe into casings.
- Use store bought casings or make your own.
