FILLING FOR MINI MILK TARTS

  • 1 litre longlife milk
  • 1 cup of sugar
  • 80 ml cornstarch
  • 80 ml cake flour
  • pinch of salt
  • 4 extra large eggs
  • 5 ml vanilla essence
  • Mix all dry ingredients and whisk together.
  • Mix vanilla and eggs together and add to the dry ingredients.
  • Whisk together.
  • Bring milk to boil and add some hot milk to egg and flour mixture while whisking all the time.
  • Remember to put stove lower while hot milk gets added to egg and flour mixture.
  • Add the of flour mixture to the boiling milk on the stove and whisk until mixture thickens.
  • Pour the cooked mixture into a bowl and cover with cling wrap.
  • Make sure the cling wrap touches the milk tart surface.
  • Wait until cooled down and then refrigerate.
  • When ready to to use as filling, mix well and pipe into casings.
  • Use store bought casings or make your own.
