FIG LEAF SYRUP

FIG LEAF SYRUP

Recipe and photo:  Marilize Hauptfeisch Fourie

  • To make fig leaf syrup, combine equal parts sugar and water, bring to a boil, and steep fresh fig leaves in the hot liquid for one hour to create a sweet syrup that tastes like coconut and vanilla.
  • 4 to 5 fresh, clean fig leaves (unsprayed and from a healthy tree)
  • 1 cup granulated sugar
  • 1 cup water
  • Wash and gently brush the fig leaves to remove any dirt.
  • Combine the water and sugar in a pan over medium heat.
  • Stir until the sugar completely dissolves and the mixture comes to a gentle simmer.
  • Remove the pan from the heat and add the cleaned fig leaves.
  • Cover the pan with a lid and let the leaves steep in the warm syrup for 1 hour.
  • Strain the liquid through a fine-mesh strainer into a clean, sterilized bottle or jar.
  • Seal and store the syrup in the refrigerator for up to 2 to 3 weeks.
