ELIZE’S GUAVADILLA JUICE
Passion fruit juice is one of the most exotic and refreshing drinks out there. Enjoy cane, passion fruit, and lemonade as a sun downer.
- 1 kg guavadillas
- ½ cup sugar
- ¼ teaspoon tartaric acid
Cut the fruit in half and scoop out the pulp with a spoon into a bowl.
Transfer the pulp to a food processor and process on low speed till the juice and seeds separate, about 1 minute.
It’s ok if the seeds break but don’t let it grind too much.
Sieve the mixture through a fine strainer and pour into a saucepan. Add the sugar and tartaric acid, simmer the mixture on medium-low heat until the syrup is slightly thick.
Once it cools, put in refrigerator.
The syrup should stay good in the refrigerator for a month or two.
To serve, add 2 – 3 tablespoons of syrup to a glass, you can add cane if you want an alcoholic version and top up with water/lemonade or soda and a dash of bitters.
Taste and adjust the sweetness by adding more syrup or liquid.
