EASY PEACH GOBBLER

Really a very quick and easy dessert with ingredients that is already in the cupboard. Just a warning: 😊 It is really very nice with a crunchy top, but very sweet. The sourness of the peaches really complements the sweetness.
- 1 cup self-rising flour
- ½ cup granulated sugar, (plus 2 additional Tablespoons for topping – I have used brown sugar)
- 125 g butter, divided (and melted separately) ½ cup
- 1 (794 g) can sliced peaches in heavy syrup, undrained (see note)
- ½ teaspoon cinnamon
- ¼ teaspoon mixed spice
- Preheat the oven to 180ºC.
- In a medium-size mixing bowl coarsely mix the flour, sugar, cinnamon, mixed spice and half of the melted butter together.
- Sprinkle about half of the flour mixture on the bottom of 20 x 20 cm baking dish.
- Pack the peaches onto the flour mixture in the dish and pour the juice over. If you like your cobbler on the dry side don’t add all the liquid.
- Sprinkle the top of the peaches with the remaining sugar/flour mixture.
- Sprinkle the top with the remaining 2 tablespoons sugar.
- Drizzle with the remaining melted butter on top of the batter. There will be a lot of liquid and it will look wet. Don’t worry, the flour mixture will soak up the liquid.
- Bake for 40-50 minutes or until the top is golden brown and bubbly. Let the cobbler sit for at least 5 minutes before serving.
- Notes:
- This recipe can easily be doubled which I suggest, because it is really a small dessert.
- Serve with a scoop of vanilla ice cream or custard. It is a very sweet dessert, so we prefer the custard.
- If you want to use very ripe fresh peaches, peel and slice about 6 peaches, sprinkle with a ½ cup of sugar and let it stand for about 2 hours to make their own syrup.
