EASY FRUIT CAKE WITH NUTS
- 125 g butter
- 2 eggs
- 1 cup castor sugar
- 1 teaspoon vanilla essence
- 1 cup milk
- 2 cups cake flour
- 1½ teaspoon baking powder
- 2 cups of Bakers cake mix
- ½ cup of pecan nuts, chopped (reserve a few whole once for the topping)
Cream butter and castor sugar.
Add eggs and vanilla essence and mix.
Mix in the milk, followed by sifted flour and baking powder.
Mix in the cake mix and pecans. Pour in a greased loaf tin.
Put some pecans on top.
Bake at 180 ºC for 45 minutes.
Note:
Easy and delicious with a cup of tea.
