EASY DRY CHICKEN CURRY

I always make this easy chicken curry.
Use a non stick pot and do not add water. Only if necessary just add a very little water.

  • 1 kg chicken, cut into pieces
  • ¼ cup oil
  • ¼ cup ghee
  • 2 onions, finely chopped
  • 1 teaspoon roasted jeera/cumin seeds
  • 2 cinnamon sticks
  • 4 whole elachie/cardamon
  • 2 bay leaves
  • 1 star aniseed
  • 1 teaspoon tumeric
  • 1 tablespoon kashmiri chillie powder
  • 1 tablespoon dhania and jeera/ cumin/coriander mix
  • 1 teaspoon roasted and ground cardamon powder
  • 1 teaspoon salt
  • 1 tablespoon ginger and garlic paste
  • 3 tomatoes, chopped

Heat oil and ghee.
Add whole spices and onions.
Fry until the onions are golden brown.
Add the chicken, ginger and garlic paste.
Cook until chicken is slightly browned.
Add spices and tomatoes and cook for another 15 to 20 minutes.
Garnish with fresh dhania/ coriander.
