EASY CHOCOLATE SPONGE

  • 4 eggs
  • ¾ cup sugar
  • 1 teaspoon vanilla essence
  • ½ cup oil
  • ½ cup boiling water mixed with a tablespoon cocoa powder
  • 1½ cups cake flour
  • 3 teaspoons of baking powder

Crean eggs, sugar and vanilla essence until light and fluffy.
Combine oil and boiling water mixture and fold into your egg mixture.
Add sifted cake flour and baking powder a little at time and fold in.
Grease 2 ovenproof dishes (20 cm x 2).
Pour mixture in and bake at 180°C for 20-25 minutes.

Top with fresh cream mixed with a tablespoon of sugar.
