DRIENIE’S QUICHE WITH CREAM

Ek het toe Felicity Lotter se voorstel gevolg en haar Quiche resep gemaak. Ek het ‘n paar verandering aan haar resep aangebring. Dit is baie lekker! Ek kon twee terte maak!

  • Quiche:
  • 500 g cut up bacon
  • 3 sliced viennas
  • 1 cup sliced mushrooms
  • 1 chopped onion
  • 2 cups cream
  • 6 eggs
  • 1 cup milk
  • 2 tablespoons flour
  • 2 cups grated cheese
  • Crust: (I used a ready made crust but here is Felicity’s crust recipe:)
  • 175 g cake flour
  • 125 g butter
  • pinch of salt
  • 2 tablespoons ice-cold water

For the crust:
Rub butter into flour, add a pinch of salt, add 2 tablespoons of ice water, (or more if its too dry), and push or roll out into an oven dish.

For the quiche filling:
Fry onion, bacon, mushrooms and viennas and mix flour in. Put aside.
Mix cream, milk and eggs. Put aside.
Spoon the fried bacon, onions, mushrooms and vienna mixture into pastry.
Pour cream, egg and milk mixture on top.
Top with grated cheese.
Bake at 180 °C for about 35 minutes or until sides are puffy and the middle is just set.
