DENZY’S CRAYFISH COCKTAILS
“Enjoy! Denzy.”
- crayfish and tails, amount to taste
- 1 onion, finely chopped
- 1 red, 1 yellow and 1 green bell pepper, chopped
- 1 teaspoon dry or fresh thyme
- 1½ cups of mayonnaise
- ½ cup sweet chilli sauce
- 1 tablespoon garlic
- juice and zest of 1 lemon
- hand full off fresh coriander
- salt and pepper, to taste
Clean crayfish and boil in hot water for 10 minutes, until crayfish is nice pink/red in colour. Take out and let it cool; when cool, cut open nicely and take out the meat and keep empty crayfish tails for later.
Add all the other ingredients with cut up crayfish meat, mix together and spoon back into empty crayfish tails, arrange it beautifully on a platter and enjoy.
