DATE AND BANANA LOAF

I had a few over-ripe bananas so I whipped up a date and banana loaf.
- 125 g soft butter
- 125 g brown sugar
- 2 eggs
- 5 ml vanilla essence
- 3 large ripe bananas, mashed
- 100 g chopped dates
- 5 ml bicarb
- 80 ml hot water
- 10 ml lemon juice
- 375 ml cake flour
- 5 ml baking powder
- Pinch of salt
- ½ teaspoon cinnamon
- ½ teaspoon ginger
- Pour hot water over the chopped dates, add lemon juice and set aside.
- Beat together the butter and brown sugar until creamy and add eggs one at a time and then the vanilla essence and mashed bananas.
- Add to this the dry ingredients and then fold in the date mixture.
- Transfer to a baking tin and bake at 180 ºC for 45 minutes.
My own recipe. I made the icing with about a cup of icing sugar, a tsp butter and a few drops of lemon juice.
