DATE AND BANANA LOAF

I had a few over-ripe bananas so I whipped up a date and banana loaf.

  • 125 g soft butter
  • 125 g brown sugar
  • 2 eggs
  • 5 ml vanilla essence
  • 3 large ripe bananas, mashed
  • 100 g chopped dates
  • 5 ml bicarb
  • 80 ml hot water
  • 10 ml lemon juice
  • 375 ml cake flour
  • 5 ml baking powder
  • Pinch of salt
  • ½ teaspoon cinnamon
  • ½ teaspoon ginger
  • Pour hot water over the chopped dates, add lemon juice and set aside.
  • Beat together the butter and brown sugar until creamy and add eggs one at a time and then the vanilla essence and mashed bananas.
  • Add to this the dry ingredients and then fold in the date mixture.
  • Transfer to a baking tin and bake at 180 ºC for 45 minutes.

My own recipe. I made the icing with about a cup of icing sugar, a tsp butter and a few drops of lemon juice.
