CRYSTALLIZED PINEAPPLE
From Elize, to Elize, I made my own sweeties, and it was delicious.
- 1 pineapple
- 1 ½ cups granulated sugar
- 3 cups water
- 2 tablespoons granulated sugar, for garnish
Clean, cut and core the pineapple, leaving it in rings or cutting to bite-sized pieces.
In a medium saucepan, dissolve the sugar in the water.
Bring to a boil until a candy thermometer reaches 110ºC (This takes about 40 minutes).
Add the pineapple and bring back up to a simmer.
Cover and cook for one hour, stirring occasionally to make sure it doesn’t stick.
Transfer the pineapple to a cooling rack with foil underneath to catch the drippings.
Put the pineapple in the dehydrator and set according to the instructions.
If you don’t have a dehydrator, dry it in the oven at 90ºC, on a wire rack in a oven pan and foil underneath for about 6 – 8 hours.
Once it’s done drying out, sprinkle with sugar or use as is. (I didn’t sprinkle it with sugar as it is sweet enough)
