  • 250 g soft butter
  • 1 cup castor sugar
  • ½ cup of brown sugar
  • 1½ cups dessicated coconut
  • 1½ cups of jungle oats
  • 1 cup chopped pecans
  • 1 tablespoon sesame seeds
  • 2 cups cake flour
  • 2 teaspoons bicarbonate of soda
  • 4 tablespoons of boiling water
  • 2 tablespoons golden syrup
  • Mix everything besides the bicarbonate of soda, water and golden syrup.
  • Mix the bicarbonate, water and golden syrup and put in the microwave for 30 seconds.
  • Make a dough. Add more boiling water if necessary to get a soft biscuit dough. Roll small balls and place on a prepared baking sheet.
  • Bake at 160ºC for 12 to 15 minutes.
  • Switch off oven and leave in the oven to get crisp.
