CROWD PLEASER CHOCOLATE CAKE

  • 8 eggs
  • 2 cups sugar
  • 1 ½ cups cooking oil
  • 1 ½ cups full cream milk
  • 1 ½ teaspoon vanilla essence
  • 3 heaped tablespoons cocoa powder
  • 3 ¼ cups cake flour
  • 6 teaspoons baking powder
  • Icing:
  • 1 litre fresh cream, whipped
  • 4 teaspoons icing sugar

Beat eggs, sugar, vanilla, oil and milk together.
Sift dry ingredients and mix with egg mixture.
Bake at 180 ºC for 30 minutes.
I used a very large Pyrex: 35 x 25 cm. An oven tray also will work or 3 round cake tins.
Cool, slit in half and decorate with 1 litre fresh cream whipped with 4 teaspoons icing sugar.
Add any topping of choice on top. I used sprinkles, smarties and other candy.
