CORN WAFFLES

CORN WAFFLES

  • 2 cups cake flour
  • 4 teaspoon baking powder
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 2 eggs separated
  • 1 cup milk
  • 2 cups canned corn
  • ½ cup melted butter

Sift the dry ingredients together.
Beat the egg yolks and add milk.
Stir the liquid ingredients into the dry ingredients. And the corn and melted butter.
Beat the egg whites until stiff and fold into the batter.
Preheat the waffle iron. Add the batter and bake for 1 minute.
Turn off power and leave for a further 2 minutes. Baking times will vary with waffle irons.
Note:
I added some dried parsley and dried chilli flakes to the mixture and a ½ cup of grated cheese.
