COCONUT BISCUITS WITH OIL AND BUTTER

  • 250 g butter
  • ¾ cup of castor sugar
  • ¼ cup of brown sugar
  • 2 eggs
  • ½ cup of cooking oil
  • 3 cups of dessicated coconut
  • 3 cups of cake flour
  • 3 teaspoons baking powder
  • Mix butter, sugars, oil and eggs together until smooth consistency.
  • Add coconut and mix.
  • Add sifted cake flour and baking powder and form a dough.
  • Press down on a prepared surface.
  • Cut out round shapes using a cooking cutter, place on a prepared baking tin, place a glaced cherry piece or sprinkles on top.
  • Bake at 180ºC  for 10 minutes.
