CHRISTMAS SWISS ROLL
Loving the look of this. Puts you in the festive mood.
- Cake:
- 2 large eggs
- ½ cup of sugar
- ½ teaspoon of vanilla essence
- ¾ cups cake flour
- ¼ cup of oil
- ¼ cup of boiling water
- red and green colouring
- 250 ml fresh whipping cream
Beat eggs, sugar and vanilla essence.
Add sifted flour and baking powder and mix.
Lastly mix the oil and boiling water and mix it into the batter.
Divide mix in 3 parts.
Colour one with a teaspoon of green colouring, one with a teaspoon of res colour and leave one plain.
Prepare a swiss roll baking tray.
Start with a strip of green followed by red and then plain batter in the baking tray lengthwise, repeat till all the batter is finish.
Bake at 180 ºC for 15 minutes.
Cool and roll out on a kitchen towel to get a Swiss roll shape.
Unroll and fill with a cup of fresh cream whipped with a tablespoon of sugar.
Roll the swiss roll again and decorate to taste.
