CHOCOLATE CAKE WITH FRESH CREAM
- 6 eggs
- 2 cups sugar
- 2 teaspoon vanilla essence
- 2 cups of flour
- 4 teaspoons baking powder
- 4 tablespoons of cocoa
- pinch salt
- 6 tablespoons of oil
- 1 ¼ cups of boiling water
- 500 ml fresh cream
- 3 tablespoons sugar
Cream eggs and sugar until fluffy.
Add vanilla essence and cream some more.
Sift in the flour, baking powder and salt and fold into the egg mixture.
Add the oil and the boiling water and mix gradually until smooth. Pour into a large round or square baking dish. Two small round baking dishes could also be used if preferred.
Bake at 180ºC for 30 to 40 minutes until well done.
Make a frosting by whipping together the fresh cream and sugar.
Slit cake through the centre and fill with cream. Decorate with fresh cream and chocolate chips/shavings.
