CHOCOLATE CAKE WITH COCONUT MILK
- 2 cups cake flour
- 2 cups sugar
- ¾ cup cocoa powder, unsweetened
- 1½ teaspoon baking soda
- 2 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon strong coffee (I used Nestle Black Roast)
- 1 cup coconut milk
- ½ cup canola oil
- 2 large eggs
- 2 teaspoon vanilla essence
- 1 cup boiling water
Mix all the dry ingredients and whisk well.
Mix all the wet ingredients except the boiling water. Add to the dry ingredients, mix and add the boiling water last, little by little.
Pour into 2 prepared baking tins.
Bake 35 minutes 180°C.
