CHILLI MANGO COUSCOUS SALAD
Absolutely one of my favorites. I often enjoy this salad as a refreshing main on its own.
- 1 cup of mango cubes
- ½ cup cooked Moroccan couscous
- 1 large salad onion, finely chopped
- ½ teaspoon chopped ginger
- ½ tablespoon dried chilli flakes
- 1 radish, finely sliced
- 1 tablespoon lime juice
- fresh parsley for garnish
Mix all the ingredients together and allow to infuse for a few minutes. Serve cold.
