CHICKPEA SALAD WITH TAHINI DRESSING
Tahini is a paste made from sesame seeds and is a staple ingredient in many cuisines.
- Salad:
- 200 g salami, diced (or any meat of choice)
- 100 g feta cheese, cubed
- 1 tomato, cubed
- handful of lettuce, chopped
- handful of rocket
- 1 can chick peas, drained
- 1 capsicum, seeded and diced (about 1 cup)
- 1 cup parsley, chopped
- ½ cup red onion, diced and soaked in 15 ml sweet balsamic vinegar
- Dressing:
- 1 clove garlic, minced
- 1 tablespoon tahini
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey
- 1 tablespoon olive oil
- 1 tablespoon water
- 5 ml soy sauce
- salt, to taste
- black pepper, to taste
- 100 g roasted pine nuts to decorate
Combine salad ingredients in a serving bowl.
Add onion and vinegar.
Combine all the dressing ingredients and whip with fork or whisk.
Add to salad and serve.
