CHICKPEA SALAD WITH TAHINI DRESSING

Tahini is a paste made from sesame seeds and is a staple ingredient  in many cuisines.

  • Salad:
  • 200 g salami, diced (or any meat of choice)
  • 100 g feta cheese, cubed
  • 1 tomato, cubed
  • handful of lettuce, chopped
  • handful of rocket
  • 1 can chick peas, drained
  • 1 capsicum, seeded and diced (about 1 cup)
  • 1 cup parsley, chopped
  • ½ cup red onion, diced and soaked in 15 ml sweet balsamic vinegar
  • Dressing:
  • 1 clove garlic, minced
  • 1 tablespoon tahini
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • 5 ml soy sauce
  • salt, to taste
  • black pepper, to taste
  • 100 g roasted pine nuts to decorate

Combine salad ingredients in a serving bowl.
Add onion and vinegar.
Combine all the dressing ingredients and whip with fork or whisk.
Add to salad and serve.
