CHEESY MASHED FLAX BREAKFAST WAFFLE

What do you do when you end up with only 1 cup of leftover mashed potatoes??   I am sure your garbage can will not enjoy eating it, AND why waste food when you can think out of the box and create something for breakfast!
Well, may I introduce you to a newly ‘out of the box thinking’ never made or seen before recipe making use of the leftover mash?

  • ± 1 cup of leftover mashed potatoes
  • 1 egg
  • ¼ cup of golden flax flour
  • 1 slice of Havarti cheese
  • Optional:
  • 2 – 3 teaspoons fried bacon pieces, I thought I had some left but when I started I found I do not have any left, but will add it next time.

Mix the mash and egg.
Gently add the flax flour and mix through.
It should be a thickish batter, very much the same as a regular waffle batter.
Heat your waffle iron as per directions.
Spray or paint a coat of VOO on the waffle iron inside.
Once heated, spoon ¾ of the mixture in the pan and spread it to cover 80 – 85% of the base.
If you use bacon, now is the time to add it on top of the raw dough.
Cover if with a slice of cheese.
Top with the remainder of the potato mixture and ensure that you completely cover the cheese.
Close the waffle iron and bake until fully cooked and you have a nice toasted waffle.
