CHEAT ROCK BUN

I love rock buns. They are traditionally made with butter (similar to a scone, hence another name they are known by is rock scone) I tried a shortcut version and it’s so so nice. No butter. Just want to share with whoever would like. Awesome with a warm cup of coffee.

  • 1  ⅛ cup self raising flour
  • ⅓ cup cream
  • ⅓ cup Sprite/ 7up / Mountain Dew
  • 1 ml vanilla essence
  • a sprinkle of cinnamon
  • a nice handful of raisins

Preheat the oven to 180ºC, fan assisted if possible.
Place al the ingredients in a mixing bowl and mix it together until it comes together and forms a soft dough. It will be a little sticky.
Drop the dough onto a greased and lined baking tray (needs to look like a rock).
Sprinkle the dough with a little sugar and bake in the preheated oven for ± 17 minutes, until golden and baked through.
It’s so YUM!!!

Note:
This makes 1 rock bun (quite big so can be shared).
