CHAKALAKA CHICKEN DRUMSTICKS

  • 9 drumsticks
  • 1 onion sliced
  • 1 tin chakalaka
  • 1 tin chickpeas
  • chutney to taste
  • sweet chilli sauce to taste
  • seasoning (I use the peppadew salt)
  • oil for frying

Preheat oven to 180°C. Spray roasting pan.
Brown drumsticks by frying in oil.
Place drumsticks in roasting pan.
Fill used frying pan with boiling water and pour over chicken (instead of using chicken stock).
Add sliced onion, chakalaka and chickpeas (do not drain the chickpeas).
Mix chutney and sweet chilli sauce  and spoon on top of the drumsticks.
Roast for one hour, with the lid on the pan.
Serve with rice and salad.
