CARROT CAKE ON THE COALS
I decided to try a carrot cake on the coals in search for our Christmas dessert. This came out really delicious and moist. I made a simple lemon icing to put over it. Baking it in the cast-iron pot on the coals gave it a delicious caramelized bottom.
We used 6 brickets under the pot with the pot being brick high of the coals and pack the lid full sins I do use a rather large pot.
- 2 cups cake flour
- 2 teaspoons baking powder
- 2 teaspoons bicarbonate of soda
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 3 cups grated carrots (about 6 – 7 medium carrots)
- 1 cup vegetable oil
- 4 large eggs
- 2 cups granulated sugar
- 2 teaspoons vanilla extract
- 1 cup chopped walnuts or pecans, optional
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
In a separate large bowl, mix together the grated carrots, vegetable oil, eggs, sugar, and vanilla extract until well combined.
Add the dry ingredients to the wet ingredients and mix until just combined.
Fold in the chopped nuts (if using).
Pour the batter into the prepared cast-iron pot and bake for about 1 hour, on medium coals, with coals on the lid as well or until a toothpick inserted in the center comes out clean.
Versiering:
Ek het sommer so met die oog gemeet wat ek gedink het gaan genoeg wees en saam gemeng:
- ± 1 ½ koppie versiersuiker
- ¼ koppie botter
- genoeg suurlemoensap om ‘n lekker smeer icing te maak
