CARROT AND PECAN NUT LOAF

  • 3 large carrots, chopped
  • ½ cup brown sugar
  • 2 eggs
  • 150 g butter
  • ¼ teaspoon bicarbonate of soda
  • ½ teaspoon of ground cinnamon
  • 1 cup of self raising flour
  • 1 cup of crushed pecans (leave aside a few for the top)
  • Blend carrots, eggs, sugar and butter together in a food processor.
  • Transfer to a mixing bowl and add all other dry ingredients including nuts, mix well.
  • Scoop the mixture into a small greased loaf tin.
  • Place a few nuts on top of mixture.
  • Bake at 180°C for 25 minutes.
