BUCKWHEAT SALAD

  • 1 cup buckwheat, raw
  • Add:
  • cucumber, baby spinach leaves or rocket or both, cherry tomatoes, feta, olives
  • For sweetness:
  • pomegranate/cranberries/figs/strawberries
  • avocado
  • Choose a dressing:
  • mustard/ balsamic with olive oil and sweet basil, garlic, honey/ onion powder

Bring water to the boil in a pot, add salt as you would to make rice, add buckwheat.
Let it cook for 10 minutes with lid on, stir occasionally, remove from pot and drain, let it cool down.

Add cucumber, baby spinach leaves or rocket or both, cherry tomatoes, feta, olives.
To add some sweetness- pomegranate/cranberries/figs/strawberries – I normally do pomegranate with quartered figs for decoration.
Add avocado.
Dressing that go well with this-Honey mustard/ balsamic with olive oil and sweet basil, garlic, honey/ onion powder… really your choice.
