BRAAI SNOEK WITH STICKY APRICOT AND ORANGE GLAZE

  • 1 kg braai snoek
  • 1 onion, cut into thick slices
  • 2 oranges, 1 cut in tick slices, 1 juiced for glaze
  • 4 bay leaves
  • Apricot Glaze:
  • 2 tablespoons butter
  • 3 tablespoons apricot jam
  • freshly ground pepper
  • 1 teaspoon fish spice

Preheat oven to 180ºC. Place the braai snoek on a foil lined baking sheet.
Place the onions and bay leaves on top of the snoek.
Place the orange slices on the baking sheet.
Place all the ingredients for the glaze in a pot and heat until the jam and butter has melted and let it cool down.
Pour the cooled glaze over the snoek and brush all the way to the edges.
Grill in the oven for 20-25 minutes until done.
Brush every 10 minutes with the glaze from the pan.
