BITS AND PIECES – GEM SQUASH
“Vir die 2020 Skorsie-kompetisie/Gem squash competition.”
- 1 gem squash
- 1 teaspoon salt
- water, for boiling
- ½ cup Mozarella cheese, grated
- ½ medium tomato
- ¼ cucumber
- ½ onion
- 1 cup white rice, cooked
- 3 tablespoons whole kernel corn
- ½ teaspoon paprika
- ½ teaspoon chicken spice
- ½ teaspoon cayenne pepper
- basil leaves, for garnishing
Only cut off the top of gem squash and remove the pips prior to boiling.
Boil gem squash in salt and water.
Mix onion, cucumber, tomato – dice it all.
Add white cooked rice, cheese, corn, cayenne pepper, paprika and chicken spice to mixture and spoon the combined mixture in the gem.
Bake at 180 °C for 10 minutes.
Top with fresh basil leaves.
