BANANA LOAF WITH A SUGAR CRUST

The girls came out for a visit and we turned a counter full of ripe bananas into the most delicious, warm banana bread you’ve ever tasted. There is absolutely nothing better than a cozy farmhouse kitchen filled with the smell of cinnamon, laughter and baking.
That crunchy brown sugar crust on top? Absolute perfection.
- 3 ripe bananas, mashed
- 2 cups self-rising flour
- 2 eggs
- 2 teaspoons cinnamon
- 1 cup brown sugar
- 1 cup seed oil
- ⅓ cup brown sugar for the topping
- Preheat the oven to 180°C and grease a standard loaf pan.
- In a large bowl, combine the mashed bananas, self-rising flour, eggs, cinnamon, 1 cup of brown sugar and seed oil, mix until the batter is smooth.
- Transfer the smooth batter into the prepared loaf pan.
- Evenly sprinkle the remaining ⅓ cup of brown sugar over the top of the batter to create a gorgeous, crunchy crust.
- Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool slightly before slicing.
