BANANA AND OATS FLAPJACKS
I have a standing rule in the house, we can have porridge for breakfast 6 days of the week, but Saturday breakfasts must be something different!
This was this morning’s something different.
- Dry ingredients:
- 1 and a half cups of oats, blended
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- pinch of salt
- Wet ingredients:
- 2 medium bananas, mashed
- 2 eggs
- 1 teaspoon vanilla essence
- 3 tablespoons cooking oil
Blits the oats using a blender/hand blender or food processor. It doesn’t have to be extremely fine, it can be coarse. Add the rest of your dry ingredients to the oats and mix with a spoon/spatula. In a mixing bowl, mash your bananas with a fork, then add all your other wet ingredients and mix together. Add your dry ingredients to your wet and mix together.
Heat up your frying pan to a medium high heat and spray it with cooking spray. Wait for the pan to get warm before adding your batter.
For generous portions, scoop ± ½ cup of batter onto your pan and cook for 2 – 3 minutes on both sides until golden brown and firm.
When using ½ cups, you will get 4 big flapjacks from this mix.
Stack your flapjacks on top of each other and add your own choice of toppings. We used some fresh banana and golden syrup
