APPLE GANACHE COOKIES WITH A SALTED CARAMEL DRIZZLE
My attempt at the Challenge – Iets Soets. Using the 5 stipulated ingredients and 2 from the free list.
Makes 28 single cookies (14 of the completed cookie) I’m sure you could get more if you wanted.
- 175 g self raising flour plus 2 tablespoons corn flour (I only had self raising so I used that)
- 100 g butter (I used Rama BAKE)
- ¼ cup honey
- ½ teaspoon cinnamon
- pinch of salt
- 1 apple peeled, cored and finely grated (I used Golden delicious)
Preheat oven to 180 ºC.
Beat the butter until creamy, add honey and mix until combined.
Add grated apple and mix until fully incorporated. Sift in rest of ingredients and mix until a ball forms in the middle of your bowl. Turn onto a lightly floured surface and roll to about 5 mm thick. Cut into desired shapes and place on a greased cookie sheet.
Bake for about 15 min until golden. Remove from oven and cool.
- Make a ganache:
- ¼ cup cream
- ½ cup dark chocolate
I just pour both into a microwave safe bowl and microwave in 10 second intervals until melted together. Mix and set in the fridge for about 15 min to thicken a little.
- CHEAT salted caramel:
- I just used 2 tablespoons tinned caramel treat and added about ⅛ of a teaspoon of salt and mixed together well.
Assemble the cookies by sandwiching together with about half a teaspoon of ganache. Then put the rest of the ganache in a piping bag and pipe onto the tops of the cookies. I put the salted Caramel in another piping bag with a smaller round tip and piped this all over the top of the cookie.
I like them. My kids like them. Maybe you will like them.
