3 BEAN SALAD WITH FRESH GREEN BEANS
The perfect salad for a braai! Oh, ok, we are having chicken pie tonight. I wonder when I will stand the heat to braai again?
- 1 can baked beans in tomato sauce
- 1 can butter beans in brine
- fresh green beans (equivalent of one can)
- ¼ green pepper, finely chopped
- 1 small onion or scallion, finely chopped
- Sause:
- 125 ml sunflower oil
- 125 ml brown vinegar
- 125 ml sugar
- 5 ml mustard powder
- 2.5 ml white pepper
- 2.5 ml coarsely ground black pepper
- 5 ml salt
Boil the green beans in water with a bit of salt until al dente, immerse in ice water. Then drain.
Add all the beans to a salad bowl and mix.
Sauce:
Mix the mustard powder, and spices with a little bit of vinegar in a saucepan, add the rest of vinegar, oil and sugar.
Stir over low heat until the sugar is dissolved and bring to a boil.
Add the onion and green pepper and boil for 1 minute more.
Pour the sauce over the beans and mix well.
Let it cool down then refrigerate. Serve cold.
This salad tastes better after a day or 2.
