APPLE CRUMBLE BREAKFAST MUFFINS

I made these cupcakes yesterday and I can’t stress enough how incredibly tasty they are. So easy to make! They freeze well too.
- For the Apple Muffins:
- ½ cup butter, at room temperature
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla essence
- 2 cups self raising flour
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup Granola
- ½ cup milk
- 2 cups peel, chopped and cubed apples (I used golden delicious)
- For the Crumble:
- 1 ½ cups Granola
- ¼ cup butter, melted
- 2 tablespoons honey
- Preheat oven to 170°C. Fill a regular muffin tray with muffin cups.
- Beat together butter and sugar until fluffy. Beat in eggs one at a time and then beat in the vanilla essence.
- In a separate bowl sift together flour, salt, cinnamon. Add the granola and mix.
- Fold dry ingredients into the wet ingredients until just combined. Don’t over mix. Fold in apples. Fill muffin cups until ¾ full.
- Crumble:
- Mix granola, melted butter and honey.
- Sprinkle granola crumbs over each muffin to cover.
- Bake for about 30 minutes until tops are golden and toothpick inserted into middle comes out clean.
- Allow muffins to cool in muffin tray for a few minutes before removing and transferring to a wire rack.
