APPLE CRUMBLE BREAKFAST MUFFINS
I made these cupcakes yesterday and I can’t stress enough how incredibly tasty they are. So easy to make! They freeze well too.
- For the Apple Muffins:
- ½ cup butter, at room temperature
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla essence
- 2 cups self raising flour
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup Granola
- ½ cup milk
- 2 cups peel, chopped and cubed apples (I used golden delicious)
- For the Crumble:
- 1 ½ cups Granola
- ¼ cup butter, melted
- 2 tablespoons honey
Preheat oven to 170°C. Fill a regular muffin tray with muffin cups.
Beat together butter and sugar until fluffy. Beat in eggs one at a time and then beat in the vanilla essence.
In a separate bowl sift together flour, salt, cinnamon. Add the granola and mix. Fold dry ingredients into the wet ingredients until just combined. Don’t over mix. Fold in apples. Fill muffin cups until 3/4 full.
Crumble:
Mix granola, melted butter and honey.
Sprinkle granola crumbs over each muffin to cover.
Bake for about 30 minutes until tops are golden and toothpick inserted into middle comes out clean.
Allow muffins to cool in muffin tray for a few minutes before removing and transferring to a wire rack.
