APPLE CRUMBLE BREAKFAST MUFFINS

I made these cupcakes yesterday and I can’t stress enough how incredibly tasty they are. So easy to make! They freeze well too.

  • For the Apple Muffins:
  • ½ cup butter, at room temperature
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla essence
  • 2 cups self raising flour
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup Granola
  • ½ cup milk
  • 2 cups peel, chopped and cubed apples (I used golden delicious)
  • For the Crumble:
  • 1 ½ cups Granola
  • ¼ cup butter, melted
  • 2 tablespoons honey
  • Preheat oven to 170°C. Fill a regular muffin tray with muffin cups.
  • Beat together butter and sugar until fluffy. Beat in eggs one at a time and then beat in the vanilla essence.
  • In a separate bowl sift together flour, salt, cinnamon. Add the granola and mix.
  • Fold dry ingredients into the wet ingredients until just combined. Don’t over mix. Fold in apples. Fill muffin cups until ¾ full.
  • Crumble:
  • Mix granola, melted butter and honey.
  • Sprinkle granola crumbs over each muffin to cover.
  • Bake for about 30 minutes until tops are golden and toothpick inserted into middle comes out clean.
  • Allow muffins to cool in muffin tray for a few minutes before removing and transferring to a wire rack.
