BACON, EGG AND CHEESE BREAKFAST CASSEROLE

Note from Melissa Ann Vermeulen – It was quite nice. I’m sure you could add extras to it, like mushrooms, peppers, etc.

  • 6 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • ½ teaspoon dry mustard
  • 6 – 9 slices, cubed bread
  • 12 slices, cooked and chopped bacon
  • 1 cup, grated cheddar cheese
  • Grease a 9″ x 13″ baking dish.
  • Mix together the eggs, milk, salt and dry mustard.
  • Spread the bread cubes in the bottom of the dish, sprinkle the bacon and cheddar cheese over the bread.
  • Pour the egg mixture over.
  • Cover with plastic wrap and refrigerate overnight.
  • In the morning bake at 180ºC for 45 – 60 mins.
