CARROT AND PECAN NUT LOAF

- 3 large carrots, chopped
- ½ cup brown sugar
- 2 eggs
- 150 g butter
- ¼ teaspoon bicarbonate of soda
- ½ teaspoon of ground cinnamon
- 1 cup of self raising flour
- 1 cup of crushed pecans (leave aside a few for the top)
- Blend carrots, eggs, sugar and butter together in a food processor.
- Transfer to a mixing bowl and add all other dry ingredients including nuts, mix well.
- Scoop the mixture into a small greased loaf tin.
- Place a few nuts on top of mixture.
- Bake at 180°C for 25 minutes.
