HOMEMADE MAYONNAISE

I made mayo! Lovely creamy sweet/tangy!
- 1 egg yolk
- 2 tablespoons honey/Dijon mustard (in photo)
- 2 tablespoons vinegar
- 240 ml sunflower oil
- salt and pepper to taste, optional
- Beat the egg yolk, honey and vinegar until frothy on your highest speed (I used my stand mixer).
- Add a few drops of oil and continue to beat, adding a few more until it thickens.
- Now pour 235 ml sunflower oil in a slow drizzle as you keep beating your mayonnaise on the highest speed.
- Add salt and pepper to taste but I find this to be perfect as is.
