THREE MINUTE PEANUT BUTTER FUDGE

Recipe and photo: Eleanor Minny
“As promised Rina, here is my very un-photogenic peanut butter fudge a week late, sorry. 😉 This recipe makes 64 squares.”

  • 4 cups white granulated sugar
  • 1 cup milk
  • 1 tablespoon vanilla extract
  • 2 cups smooth peanut butter
  • Use either a lined 23 x 23 cm square pan or a silicone pan.
  • Heat the sugar, milk and vanilla on high until the sugar dissolves.
  • Once it starts to bubble to a full rolling boil, set your timer for exactly three minutes. Cook and stir it often.
  • Add two cups of peanut butter and stir vigorously until well combined and the fudge loses its shine.
  • Pour into the silicone or lined pan. Use baking paper and a measuring cup to even the  fudge out.
  • Cool it at room temperature until completely cool.
  • Cut the fudge into squares.
