CREAMY SPINACH PASTA

Adding great side dishes to a braai makes it even better. Celebrated my birthday and this dish was one of them.

  • 1 onion, chopped
  • 1 bunch spinach
  • 1 tablespoon garlic
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 500 g pasta of your choice, cooked as per instructions on package and set aside.
  • 1 cup fresh cream
  • ¾ cup milk
  • ½ cup Maizena
  • 1 cup grated cheese
  • In a hot pan on the stove, braise the onion and garlic in butter until golden brown.
  • Add the spinach, salt and pepper and cook until the water evaporates.
  • Add the cooked pasta and mix through.
  • Make a paste with the Maizena and milk and add to the spinach mixture in the pan and stir.
  • Cook the mixture until it starts to thicken slightly.
  • Add the cheese to the spinach mixture and stir until melted.
  • Lastly add the cup of fresh cream, give it a stir and remove from the heat.
  • Serve warm with a main meal. Absolutely delicious.
