CREAMY SPINACH PASTA

Adding great side dishes to a braai makes it even better. Celebrated my birthday and this dish was one of them.
- 1 onion, chopped
- 1 bunch spinach
- 1 tablespoon garlic
- 1 tablespoon butter
- 1 teaspoon salt
- 1 teaspoon black pepper
- 500 g pasta of your choice, cooked as per instructions on package and set aside.
- 1 cup fresh cream
- ¾ cup milk
- ½ cup Maizena
- 1 cup grated cheese
- In a hot pan on the stove, braise the onion and garlic in butter until golden brown.
- Add the spinach, salt and pepper and cook until the water evaporates.
- Add the cooked pasta and mix through.
- Make a paste with the Maizena and milk and add to the spinach mixture in the pan and stir.
- Cook the mixture until it starts to thicken slightly.
- Add the cheese to the spinach mixture and stir until melted.
- Lastly add the cup of fresh cream, give it a stir and remove from the heat.
- Serve warm with a main meal. Absolutely delicious.
