Adding great side dishes to a braai makes it even better. Celebrated my birthday and this dish was one of them.

  • 1 onion, chopped
  • 1 bunch spinach
  • 1 tablespoon garlic
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 500 g pasta of your choice, cooked as per instructions on package and set aside.
  • 1 cup fresh cream
  • ¾ cup milk
  • ½ cup Maizena
  • 1 cup grated cheese

In a hot pan on the stove, braise the onion and garlic in butter until golden brown.
Add the spinach, salt and pepper and cook until the water evaporates.
Add the cooked pasta and mix through.
Make a paste with the Maizena and milk and add to the spinach mixture in the pan and stir.
Cook the mixture until it starts to thicken slightly.
Add the cheese to the spinach mixture and stir until melted.
Lastly add the cup of fresh cream, give it a stir and remove from the heat.
Serve warm with a main meal. Absolutely delicious.
