NAKED CHICKEN BREAST FILLETS
- Chicken tenders:
- 1 tablespoon chicken scratch (recipe below)
- 4 chicken breast fillets
- 3 – 4 tablespoons olive oil
Cut the fillets in preferred portions and season the fillets with chicken scratch.
Heat the oil in a large skillet over medium-high heat. Use enough oil to cover the bottom of the skillet. Once the oil is hot, place the seasoned fillets in the skillet.
Cook about 4 minutes or until lightly browned on each side and cooked through.
Remove from heat. Let it rest for about 10 minutes before serving.
- Chicken scratch:
- 3 tablespoons salt
- 3 tablespoons paprika
- 3 tablespoons garlic powder
- 1 tablespoon dried thyme
- 1 tablespoon white pepper
- 1 tablespoon black pepper
- 1 tablespoon cayenne pepper
- 1 tablespoon onion powder
Mix all ingredients together and store in an airtight container.
This is absolutely amazing and a big hit in our house.
If you use more than 4 fillets and there is some left over, it is delicious the next day in a garden salad.
