DOUBLE FRIED POTATO CHIPS
Cut potatoes in even size chips.
Soak the chips in water for 30 minutes and drain.
Place a big enough pot with oil on the stove and heat the oil up to 120°C.
Add the chips and cook for about 10 minutes.
Remove the chips from the oil and place on kitchen paper to cool.
When needed, reheat the oil to 180°C and re-fry the chips until golden brown.
Remove the chips from the oil and place on kitchen paper to strain from access oil.
Season to taste and serve.
