YASMEEN’S LAMINGTONS

  • Cake:
  • 4 eggs
  • 250 g butter
  • 2 teaspoons baking powder
  • ½ cup of milk
  • 3 cups of cake flour
  • Extra:
  • desiccated coconut for rolling

Beat butter and sugar well.
Add eggs and beat some more.
Stir in the milk.
Fold in sifted dry ingredients.
Bake at 180 ºC for 30 minutes.
When cool, cut into blocks.

  • Syrup made from:
  • 4 tablespoon cocoa powder
  • 1 ½ cups of water
  • 1 tablespoon butter
  • 3 cups of sugar

Mix all ingredients and boil together for 5 minutes.
Dip the cake blocks in the hot syrup and roll in desiccated coconut.
