ZUCCHINI SLICE

Ek het hierdie probeer vandag vir manlief se kosblik. Baie lekker!

  • 6 eggs
  • 1 cup of self raising flour
  • 1 medium zucchini, grated (baby marrow)
  • 1 medium carrot, grated
  • 1 brown onion, diced
  • 4 slices of bacon, diced
  • 1 cup of grated tasty cheese
  • ½ small red or green capsicum, diced (pepper, optional)
  • ¼ cup vegetable oil
  • ¼ cup cream
  • ½ teaspoon cracked black pepper
  • 1 teaspoon salt

Pre-heat the oven to 170ºC.
Grease a oven tray off 20 x 20 cm and line with baking paper.
In a bowl add the eggs, oil and cream and whisk until combined.
Add the salt and pepper to the mixture.
Sift in the flour and stir until all well combined.
Squeeze any excess moisture out of the grated zucchini then add to the bowl along with the carrot, onion, capsicum, bacon and cheese.
Fold through until well mixed.
Spoon into the oven tray.
Bake for 30 – 40 minutes.
