YELLOW POTATOES
The amount of ingredients are to personnel taste and desire.
- potatoes, peeled and cut
- salt
- turmeric
- oil, for frying
- onion, chopped
- ginger and garlic paste
- mustard seeds
- whole dry red chilies
Place the potatoes in a bowl with a little water and add salt and turmeric powder to taste, leave to marinate.
In a large enough frying pan, heat the oil and add the onion, sauté the onion until brown.
Add the ginger and garlic paste to taste and let it simmer for 2 – 3 minutes.
Add the mustard seeds and dry red chilies to the onion mixture in the pan and allow the mixture to simmer.
Add the marinated potatoes with a little of the turmeric water to the onion mixture in the frying pan and allow the potatoes to simmer until the water has evaporated and the potatoes are soft and cooked through.
