WHITE PITA BREAD
- 2 cups warm water
- 1 tablespoon yeast
- 2 teaspoons sugar
- 4 ½ cups cake flour
- 1 ½ teaspoons salt
- 3 tablespoons olive oil
Place ¼ cup of warm water in a small bowl.
Add yeast and sugar, stir.
Let rest for 5 minutes.
Place flour, salt, and oil in a large mixing bowl.
Add yeast mixture and remaining water and mix until flour is completely mixed.
Knead dough on a lightly floured surface for 10 minutes.
Place dough in a well oiled bowl and oil the top lightly.
Cover and let rise in a warm place for 1 hour.
Turn dough out on a lightly floured surface and knead to remove any air bubbles.
Divide into 12 pieces and form each into a ball.
Roll out each ball to form a 6 inch disk.
Place on a baking sheet or pizza stone and bake in a pre-heated oven at 260ºC (500 F) for 5 minutes.
