WHIPPED BERRY PORRIDGE

WHIPPED BERRY PORRIDGE

  • 1 litre water
  • 400 ml lingonberries (blueberries or berries of your choice)
  • 150 ml semolina
  • 100 ml sugar
  • pinch of salt

Note:
You can use different berries like blueberries or strawberries, but traditionally it is lingonberries.

Put the water and berries in a pot and boil for 10 minutes. Strain the berries and pour the berry water back into the pot.
Add the semolina and cook for 10 minutes. Then add the sugar and salt.
Take the porridge off the heat and let it cool. Use an electric mixer and whip the porridge until light and fluffy.
